What it tastes like

Blackcurrant up front, then candied citrus, like the sweets rather than the fruit. It’s juicy and sweet, with a clean finish. The medium roast keeps that fruit lively without making it sharp. It’s the sort of cup that’s dead easy to drink.

How to brew it

Filter suits it best. Pour over or an automatic drip machine keeps the cup clean, so the blackcurrant and citrus come through clearly. A cafetière works too if you like a rounder, heavier cup. It’s not made for espresso, but it can be done.

Where it’s from

This is from the Kasese District in Uganda. It’s washed (the fruit’s taken off the bean before the beans are dried), which is less usual there, as most Ugandan coffee is natural. It comes from Agri Evolve, working with around 2,000 smallholder farmers, and is processed at the Nyabirongo Processing Station.

Why it’s called Midnight Flyer

The first time Agri Evolve tried washing a lot, the trucks bringing the cherries in were delayed. With over-fermentation getting closer by the hour, the drivers set off in the middle of the night and raced down a rain-soaked mud road to reach the washing station in time. They made it, and the lot came out in great shape. It’s been named after that night ever since.

Questions

Does it suit espresso?
It can work, but it’s really a filter coffee. Expect a bright, fruity shot rather than a chocolatey one, so it’s best if you like your espresso on the fruity side.

Whole bean or ground?
Whole bean stays fresh longer. No grinder? We’ll grind it for you: coarse for a cafetière, medium for filter, fine for espresso.

How fresh is it?
It’s at its best from about a week after roasting up to a month or so. The roast date’s on every bag.

How should I store it?
Keep the bag sealed, somewhere cool and dark. Not the fridge, it picks up smells. Got a 1kg bag? Freeze half and it’ll keep for months.
